Cream cheese stuffed-bacon wrapped jalapenos!
For dinner tonight, I actually ate jalapenos--yes me! Who doesn't like/can't eat spicy stuff! The gentlemen I bought them from locally grown said they aren't very hot, I made sure to remove ALLLLL seeds & the ribs (the white strips on the inside) then rinsed them completely to remove any juice that may have lingered. Filled them with cream cheese & wrapped them in bacon! Baked them at 325 for about half an hour. They wer so delicious!! A couple of them had a little bit of a bite to them, almost too much for me-but only almost, most of them weren't hot at all & they were so very tasty!!! Well worth the risk of a few hot ones! I usually make sure I have some milk just in case lol!
T.G.I.F.!!!
Hi everyone!!! I hope you have had a grand Friday so far =D It's been a good day to me! Today I will buy some fresh veggies from a local farmer, some patty pan squash, zucchini, yellow squash, jalapenos (I do NOT normally like spicy stuff-just fyi! These ones are pretty mild though! Tried a few last week and baked them in the oven, stuffed with cream cheese & wrapped in bacon & they were absolutely delicious!!) I have a great recipe from an online friend of mine to try a new way to make spaghetti sauce from scratch & hopefully if I follow her instructions to a T, I can stop messing up my sauce as it really does look so good & it's a bummer when it doesn't taste 'right'. I also get a lot of costa rican peppers from this farmer, I had never had those until recently! Similar to a bell pepper, if you like bells, you'd probably like these! They are a little crisper, thinner pepper wall with a slightly thicker skin. Crisper taste, I enjoy them raw, cooked in olive oil with some onion & squash, or my favorite! is putting them in a casserole with some cheese and a flour/milk/water/egg mixture and baking in the oven! Sooooo yummy!! I will post more later =) do any of you have anything planned for the weekend?!
